With the end of February approaching, I thought I’d recap the work I’ve been focused on the past few weeks! I just wrapped up a big shoot for the Cooking Light Diet, have some brussels sprouts recipes coming up on RealSimple.com and a post for Wonderful Sweet Scarletts Grapefruits coming next week! It’s been a busy month, and I for one am tired of the grocery store. Adobe the pup hasn’t gotten tired of recipe testing, though (His favorite is when bacon ‘falls’ on the floor).
My latest project, Cooking Light Desserts for Two, consisted of five existing recipes and the other 5 of which I developed. My favorite recipe was the Chocolate Cherry Cupcake for Two, only using one bowl and tasting hauntingly similar to Dr. Pepper. And I know the quinoa thing is way overdone, but toasting quinoa grains makes for an excellent crunch factor, perfect for hipster healthy Quinoa and Coconut Chocolate Covered Strawberries.
