It’s a Wonderful [Halos] World: Super Green Salad with Halos Mandarins

DSC_9125I don’t know about you, but I am pretty much in love with Halos Mandarins. Around the holidays, I can always find myself reaching for a cute little orange as a snack and before I know it, I’ve eaten, like, seven. I’m sure that the amount of sugar in these little easy-peel babes is pretty comparable to a slice of chocolate cake, but I like to think that eating something from the ground is better for you. And to be honest, I was totally prepared to come to terms with the fact that these mandarins were totally a product of GMOs because seedless, easy peel and adorable little snacks are totally not natural, right? Not one remotely genetic modification here, so we are good to go on the snacking front.

Thinking about them as a snack, the recipe developer in me started wondering about other ways I could use them. When I contacted Halos and told them how crazy I was about their product, they asked me to come up with a recipe including the citrus gems. Plus, they’ve provided me with a few giveaway items because who doesn’t want a Halos shirt!? Check out the recipe below and comment with your record number of Halos consumed in a single day (Seriously, mine’s like 7). Winner will be chosen Sunday, December 21.

Update 12/22/2014: Congrats to Sandra for winning the Wonderful Halos (TM) prize pack!

Super Green Salad with Halos Mandarins, Pistachios and Tahini Dressing

Prep Time: 10 minutes

15 minutes

Yield: 1 salad

  • 1 large handful super greens mix (baby kale, spinach, chard, etc.)
  • 1 Halos Mandarin, segmented
  • 2 tbs chopped pistachios
  • 1 tbs tahini
  • 2 tbs lemon juice
  • 1 clove garlic, crushed
  • 1/2 tsp salt

  1. Combine tahini, lemon juice, garlic and salt. If your dressing is too thick, add some water to thin it out.
  2. Plate your salad with the super greens, Halos segments, a sprinkle of pistachios and a drizzle of dressing!

  1. My Halos number would have to be about 4? 5? But I wasn’t trying. I didn’t even get a real shot at this. Hand me a bag of Halos and I will show you what true dedication looks like. I’ll make you so proud.

  2. This is definitely what some people would call a “Sammy Salad”! My favorite flavors all in a healthy salad. Definitely can’t wait to try the dressing. Get in my belly!

  3. Mine is about 4 but Covi can do serious damage to an entire box. Of course, he only eats half of each segment and then makes whomever is around eat the rest.
