I don’t know about you, but I am pretty much in love with Halos Mandarins. Around the holidays, I can always find myself reaching for a cute little orange as a snack and before I know it, I’ve eaten, like, seven. I’m sure that the amount of sugar in these little easy-peel babes is pretty comparable to a slice of chocolate cake, but I like to think that eating something from the ground is better for you. And to be honest, I was totally prepared to come to terms with the fact that these mandarins were totally a product of GMOs because seedless, easy peel and adorable little snacks are totally not natural, right? Not one remotely genetic modification here, so we are good to go on the snacking front.
Thinking about them as a snack, the recipe developer in me started wondering about other ways I could use them. When I contacted Halos and told them how crazy I was about their product, they asked me to come up with a recipe including the citrus gems. Plus, they’ve provided me with a few giveaway items because who doesn’t want a Halos shirt!? - 1 large handful super greens mix (baby kale, spinach, chard, etc.)
- 1 Halos Mandarin, segmented
- 2 tbs chopped pistachios
- 1 tbs tahini
- 2 tbs lemon juice
- 1 clove garlic, crushed
- 1/2 tsp salt
- Combine tahini, lemon juice, garlic and salt. If your dressing is too thick, add some water to thin it out.
- Plate your salad with the super greens, Halos segments, a sprinkle of pistachios and a drizzle of dressing!
